Rock Bar, Bali’s iconic sunset, cocktail, and entertainment venue, marks its 15th anniversary with the launch of an innovative sustainable cocktail menu crafted by its newly appointed Head Mixologist, Simone Marchese. This groundbreaking menu not only pays homage to the breathtaking natural environment surrounding Rock Bar—particularly the Indian Ocean and its legendary sunsets—but also sets a new standard for eco-friendly mixology.
With over a decade of experience at world-renowned venues such as Soho House and Paris Society, Marchese brings his expertise and passion for sustainability to Rock Bar. Recognized among France's top 100 bartenders by COCKTAILSPIRITS in 2023, he is known for his creative, zero-waste philosophy. "My personal style is simple and efficient—using familiar ingredients in innovative ways," Marchese explains. "This menu is special because it embodies my commitment to eliminating waste while showcasing the dynamic flavors of the region."
A Sustainable Tribute to the Indian Ocean
The menu highlights local ingredients, many of which are sourced fresh from AYANA Farm, and draws inspiration from the diverse flavors of countries bordering the Indian Ocean, including Indonesia, China, Korea, and Zanzibar. Using every part of each ingredient, Marchese’s creations are as eco-friendly as they are flavorful, reflecting AYANA Bali’s dedication to sustainability.
Signature Creations
Among the standout cocktails is Notoro, inspired by Japan’s Lake Notoro. This umami-rich blend of El Jimador Tequila, nori, and moringa captures the spirit of the sea with every sip. True to the zero-waste ethos, moringa is used both in a cordial and as a powdered garnish.
Another highlight, Dragon Sunset, draws inspiration from Vietnam’s dragon fruit plantations. Vibrant hues of purple and white from dragon fruit, combined with gin, Cointreau, and rose petals, create a refreshing cocktail that uses the entire fruit, including its skin. Meanwhile, the Dala Spritz offers a Mediterranean twist with Aperol infused with tomato, basil, and olives, incorporating dehydrated tomato as a garnish.
For non-alcoholic options, Rock Bar offers the Nom Tom, a tropical mocktail inspired by Thai coconut dumplings. Blending mint and coconut, it delivers a refreshing, zesty homage to the region’s traditional flavors.
