Cavaliere Giovanni Viterale is a hospitality veteran with over 36 years of international experience across Asia and Europe. He currently serves as Cluster General Manager for Raffles Sentosa Singapore and Sofitel Singapore Sentosa Resort & Spa, where his leadership has earned numerous accolades, including TripAdvisor’s Best of the Best and the Green Globe Certification. Previously, he was General Manager of The Fullerton Hotels and Resorts, overseeing landmark properties in Singapore and launching The Fullerton Hotel Sydney. Knighted with the Order of the Star of Italy, he has hosted world leaders and major global events, and is renowned for his expertise in luxury hotel management, sustainability, and team development.

Can you share a bit about your journey in the hospitality industry and how you got started?

My passion for the hospitality industry has been a driving force throughout my career, one that began over 35 years ago. I started my journey in Europe, focusing on food and beverage operations at some of the world’s most renowned hotels, including The Lygon Arms in Broadway, England; The Claridges-Savoy in London; The Mayfair/Portman InterContinental Hotel London; Lugano Beaurivage Hotel & Palace; Hotel Nationale in Montreux, Switzerland; and Brenners Park Hotel in Baden-Baden, Germany.

My transition to Asia began at Conrad Hong Kong, where I served as Resident Manager. From there, I took on the strategic development of The Fullerton Heritage Precinct as General Manager, overseeing the transformation of seven significant landmarks, including The Fullerton Hotel Singapore, The Fullerton Bay Hotel Singapore, The Fullerton Waterboat House, One Fullerton, The Fullerton Pavilion, Clifford Pier, and Customs House. In 2019, I had the privilege of opening The Fullerton Hotel Sydney, the group’s first international expansion outside of Singapore.

After these landmark projects, the opportunity to contribute to the reshaping of Singapore’s hospitality landscape by leading the second Raffles property in Singapore was both an exciting and natural progression for me. The Raffles name carries immense prestige and history, and being part of a brand with such a legacy is truly a privilege. I’m deeply inspired by its commitment to excellence, and I’m thrilled to play a role in continuing and expanding its legacy here in Singapore.

What is your long-term goal for your property? What does success look like for this property and for you and your team?

My primary goal is to establish Raffles Sentosa Singapore as a benchmark for luxury hospitality, both in Singapore and globally. Through the dedication of our team, we aim to extend Raffles’ renowned gracious hospitality and curate unforgettable, bespoke experiences that highlight the best of Singapore. 

For us, success means not only meeting the expectations of our guests – through the generations – but exceeding them, creating meaningful, lasting memories that reflect the luxury, elegance and rich heritage that the Raffles brand represents. 

How do you see the hospitality industry evolving in the next few years?

One trend I find particularly exciting is the growing emphasis on sustainability in luxury hospitality. Increasingly, guests are looking for experiences that align with their values, especially when it comes to environmental responsibility. I believe this shift is incredibly important, not just for the planet, but for the future of luxury hospitality. 

Guests today are more discerning than ever, and they increasingly want to feel that their choices are having a positive impact on the world. It’s exciting to be part of a movement that merges luxury with responsibility, and it’s something we are deeply committed to at Raffles Sentosa Singapore

At the same time, we’re seeing guests prioritising space and wellbeing more than ever. They’re looking for more than just indulgence—they are seeking a sense of peace and rejuvenation. In a world that moves faster than ever, there’s an increasing desire for expansive, private spaces where tranquillity takes centre stage. It's not just about being in a nice resort anymore; people want environments that promote both mental and physical wellness, allowing them to disconnect and reconnect with themselves.

What personal qualities do you believe have been most critical to your success in the hospitality industry?

I believe that the most critical personal qualities for success are adaptability, empathy, and a strong sense of integrity. The ability to adapt to an ever-changing environment, to the diverse needs of guests, and to the evolving demands of the industry has been essential to my journey. Empathy, too, is crucial—understanding the unique needs and desires of each guest and team member allows me to create experiences that truly resonate. Lastly, integrity in every decision I make, whether it's related to service, sustainability, or leadership, is key. Upholding a high standard of ethics and honesty builds trust and fosters lasting relationships, which are the foundation of our industry.

What advice would you give to your professionals aspiring to build a career in luxury hotel management? Are there any specific skills or experiences you would recommend they focus on to stand out in the industry?

My advice would be to remain deeply curious, continuously learning, and always embracing a mindset of service. The luxury hospitality industry is about much more than just providing excellent service—it's about crafting unforgettable experiences, which requires a deep understanding of people, culture, and the nuances of the industry.

A strong foundation in both operational knowledge and emotional intelligence is invaluable. Focus on developing leadership skills, as a great manager not only drives results but also inspires and nurtures the team. Additionally, gaining exposure to diverse markets and cultures will enrich your ability to think globally while respecting local traditions. Finally, never underestimate the importance of attention to detail—this is what sets luxury experiences apart and creates those unforgettable moments for guests.
