His aims for culinary excellence coupled with an ability to weave authentic flavors with innovative techniques and he is now serving as the Executive Chef at the Radisson Blu Bangkok. Serafin along with his team continue to surprise and delight, turning dining experiences into great memories.
What is your goal for Radisson Blu Bangkok as executive chef?
Our aim is to have one of our signature restaurants to be ranked as one of the top places in Bangkok for dining and having a great time. Our signature outlets are Attico - Tuscany cuisine, Brewski the rooftop bar, China Table, Twenty Seven Bites with the Sunday Brunch.
Which outlet in your hotel is your favourite and why?
Every one of our outlets is unique in their offerings, and in my opinion, all of them deserve to be considered a 'favourite'. Brewski is one of the best rooftop bars in Bangkok with a wide selection of craft beers, great snacks and daily live DJ entertainment. Attico has great quality Italian food and wines and is a great place to dine for families, couples and friends and from the 28th floor, has a top view of the city. China Table is very popular for Peking duck, Suckling pig and Dim Sum, and is very popular with its 'All You Can Eat' Dim Sum menu. Twenty Seven Bites Brasserie offers a great Sunday Brunch where all outlet chefs (Attico, Brewski, China Table, Indian and Thai) join personally and cook live. B-Sharp is one of nicest lobby bars in town with live musical entertainment, afternoon tea, great cocktails, as well as amazing coffee and tea selections.

How do you manage your team and what motivates them?
You need to always bring 'fun' to work. Let your team enjoy working with you and always involve them in new ideas; let them be creative.
Don't stop people from learning and always keep them informed. You need to use a different leadership style depending on the employee. Each employee is different and they need different styles of support or guidance. Don't be a Micromanager and understand the limits to which you can push them. Spend your time with your performers, they deserve it.
